According to previous research, the main antioxidant components found in cinnamon bark extract are polyphenols (tannins, flavonoids) and phenolic essential oils, making phenolic identification important for evaluating its antioxidant potential. The aim of this study was to determine the total phenol content in the ethanol extract fraction of cinnamon bark. Fractionation is carried out using two types of solvents that do not mix with each other andhave different levels of polarity so that secondary metabolite compounds can be maximally attracted by the solvent. The solvent usednamely water, ethyl acetate and n-Hexane. The total phenolic content of each fraction was determined using the Folin–Ciocalteu method analyzed by UV–Vis spectrophotometry, and all measurements were performed in triplicate. The cinnamon bark water fraction has a total phenol content of 65.089 mg GAE/g ± 0.968, the cinnamon bark ethyl acetate fraction has a total phenol content of 37.0908 mg GAE/g ± 0.182 and the cinnamon bark thick extract has a total phenol content of 48.8552 mg GAE/g ± 0.325. The results showed that the cinnamon bark water fraction had the highest total phenol content of 65.089 mg GAE/g ± 0.968 while the cinnamon bark ethyl acetate fraction had a total phenol content of 37.0908 mg GAE/g ± 0.182. It can be seen that phenol compounds are compounds that are included in the group of polar compounds, because phenol compounds are more abundant in the cinnamon bark water fraction.
